After being at work all day, cooking helps me relax! It's almost a mindless task. And having Taco's for dinner feel decadent while being extremely simple. I am a soft taco person so, I always have a set of corn tacos at home. With Jon's guac and my spicy salsa, this is a simple, fast dinner that literally takes less than 30 minutes to cook.

Chicken Tacos w/ Cilantro Guacamole
Serves 2

5-6 pieces of boneless chicken thighs
3 garlic cloves, chopped
1/2 white onion, chopped
1 bay leaf
1 tbsp ground cumin
1 tbsp Ancho powder (chili powder)
1 Dried Red Chili
Salt and Pepper to taste

Combine all ingredients and add water to cover. Bring it to a boil and then simmer, partially covered. Cook until meat is very tender, about 30 minutes. Remove chicken from liquid and cool. Chop into small pieces.

Next heat oil on medium heat in a pan and add in the chopped chicken. I like eating grilled chicken in my tacos, so this is my way to get a 'fake' grill taste without any effort. Saute for 5 minutes on medium high heat and start adding liquid the chicken boiled in to the pan. Add a bit of onions, chillies & garlic along with the water. Saute for another few minutes and then taste and adjust seasonings as necessary.

Serve on warm soft taco, green salsa, cilantro guacamole (recipe below), sour cream and cheese.

Cilantro Guacamole
2 Avocados
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp chilli powder
2 tsp lime juice.
Sea Salt
Pepper

Mix all ingredients to together and mash till paste. Garnish with Cilantro leaves.
